I have noticed fans of NMS not liking or enjoying Starfield much, specially the ones that were expecting something closer to that game.
I haven't actually played Starfield, so can't really say anything related to game systems or flying, but "litany of items to pick up or not" is how Bethesda RPGs are. Elder Scrolls and Fallout both are like that. I would say just remove any mental connection you are making with NMS, and try to play it for what it is. You may end up liking it, or you may realise it just isn't for you.
